Great tasting pancakes without sending your insulin through the roof!1 cup almond flour2 eggs1/4 cup water 2 T oil1/4 teaspoon salt1 T sweetenerPreparation:Mix ingredients together and cook as you would other pancakes. I use a non stick pan with some canola oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.makes Six 4-inch pancakesNutritional Information: Each pancake has 2 net carbs plus 2 grams of fiber, 6 grams of protein, and 155 calories.

how big are the pancakes? I've made them kind of like that but mixed in flax meal, I smashed up some blueberrys with Splenda and microwaved it into a syrup, was very tasty.
